Soup's On...with Paula #3





Old Fashioned Split Pea Soup



1 ham bone and leftover chopped ham
6-8 C of water
1 lb split yellow peas
1 chopped onion
4 carrots chopped
Pepper to taste
Chopped chives as garnish


I always make this soup after I have baked a ham.  It is delicious, and one of my wintertime comfort foods. I start by putting 6-8 cups of water in my big iron soup pot.  In goes the ham bone, about a pound of split yellow peas, and a chopped onion.  This is brought to a boil and then simmered for as long as I have.  If I do this after supper, I am liable to simmer it for the evening and then do the rest the next day.  When I resume the process, I remove the bone, add several chopped carrots, (some people add cubed potato as well) and pick off the leftover ham from the cooled bone.  I like lots of ham in mine, so if there isn't much left on the bone, I always hope there is some leftover from the meal and chop it up to add.  This is simmered again just until the carrots are softened some.  I don't usually add salt, as the ham is salty enough, but I will add pepper, and a bit of chives to serve.

~LOVE~ & Linky Follower Party #2

As I thought about Valentine's Day, I knew I wanted to use the color pink in my decorating this year.  My sister, Lisa, gave me the sweetest cream and sugar and four cups and saucers as part of my Christmas gift this year.  She found them at one of our favorite haunts.  ;0)  They are beautiful, and have lots of pink, so I knew they would be perfect.

I also knew I wanted roses in my silver coffee pot.  These sweet little buds have begun to dry, and I am ready to hang them upside down to complete the process.  They will be beautiful for a long time.

I won a fabulous giveaway from Christine @ Stonehouse Living a few weeks ago.  This silver dish was one of the many things she sent me.  I love it!  Click on her blog name above to see all the other wonderful things she sent to me!

I even decorated my sugar bowl.  To be completely honest, I believe it was my father, that I first saw do this.  It was many years ago.  He added a teaspoon, or so, of colored sugar to the sugar bowl.  Mix it all up, and your sugar bowl is decorated for the occasion.

The Valentine's banner took about 10 minutes to make.  I used my trusty glue gun, and glued the paper doilies and buttons onto a piece of ribbon!

Jess @ A Cozy Cottage in the City made the most beautiful cupcakes in January, and I vowed I would try and replicate them for Valentines.  I also think they would be perfect for Mother's Day, Easter, Birthdays, Showers...well, you get the picture.  I love cupcakes!  All you 'vintage lovers' will love Jess's blog.

Take 5 with Kathy - "When darkness turns to light..."


As twilight gradually faded away into the darkness of night this past Tuesday, I was delighted to see the most beautiful full moon creeping above the housetops across the street. The higher it rose, the brighter and bigger it appeared. Earlier, I had heard a meteorologist refer to it as the “snow moon” and indeed it seemed more brilliantly white than usual. How it lifted my spirits and lit up everything in its gaze!

Sometimes in my darkest hours of life experiences, I have felt that inky blackness penetrating my very soul. It is a very lonely  place even when I am clinging to my faith in God and the knowledge that He has all things under control.

I learned some valuable principles this week as I studied the life of one woman who had faced her darkest hour. She, along with her husband, had made the difficult move to a new land because of famine in their home territory. They now lived as foreigners among people who spoke a different language, worshipped strange gods, and followed unfamiliar customs. If that wasn’t hard enough, her husband died leaving her with two sons to raise on her own. Being a widow in a foreign land would no doubt put her in a desperate situation. Eventually, the sons married local women. But, the sons also died and now this dear widow had lost her entire family and was left with no heirs to carry on the future of her family lineage. Only her two daughters-in-law remained with her. What could she possibly do?

If you’re familiar with the story, you realize the widow was Naomi, found in the biblical book of Ruth. The daughters-in-law were Orpah and Ruth. Naomi’s experience has taught me several lessons that I can apply when I am in the midst of a tough time.

First, Naomi never lost her faith in God. Even though she suffered great personal loss, was thrust into poverty, and realized she was too old to marry again and bear more children, she still trusted in God’s sovereignty. Although she admitted to feeling God had abandoned her, she continued to believe in Him. That really inspires me!

Second, she returned to the support of her friends. As soon as Naomi heard the Lord had provided for His people back in her homeland, she began packing. Orpah and Ruth also prepared to accompany her, but Naomi tried desperately to convince them to return to their own mother. What could she possibly offer them but a life of poverty? She also knew what they would face in a foreign land, especially as widows. She could never provide them with a family. What love was expressed between them as they wept and agonized over their dilemma! In the end, Orpah decided to return home, but Ruth clung to her mother-in-law and vowed never to leave her. Together, they journeyed back to Bethlehem, Naomi’s home town. As Naomi’s friends watched the pair approaching, they said, “Can this be Naomi?”[i] After many years away and showing the strain of such grief and loss, it is entirely believable that these friends had some difficulty  recognizing Naomi.

Her wounded state is evident from her response, “Don’t call me Naomi…Call me Mara, because the Lord has made my life very bitter. I went away full, but the Lord has brought me back empty. Why call me Naomi? The Lord has afflicted me; the Almighty has brought misfortune upon me.”[ii]

Naomi means “pleasant”, “lovely”, or “delightful”. She obviously no longer viewed herself in this light. Instead she asked her friends to call her Mara which means “bitter”.

Scripture doesn’t say how her friends immediately treated her after that, but at the end of the book, we know they remained faithful to her. I am so thankful to God for the friends who surround me, pray for me, and support me in all circumstances.

Ecclesiastes 4:9 says, “If one falls down, his friend can help him up.” And Proverbs 17:17 says, “A friend loves at all times…” Of course, our most faithful and loyal friend is Jesus Christ. He Himself said, “…I have called you friends, for everything that I have learned from my Father I have made known to you.”[iii] The ultimate gift of His friendship was laying down His own life for you and me so that we could receive forgiveness of sins and the promise of eternal life with Him in Heaven!

Well, once again time has flown by and I will just have to continue Naomi’s story next week. Meanwhile, I will be sure to invest valuable time with my best Friend and Saviour, Jesus Christ, and also with the earthly friends He has provided for me.

Soup's On...with Paula #2




Sausage and Bean Soup
I jotted this recipe down about 4 years ago from a magazine in my Dr.s office, and it has become the one and only soup my 11 year old daughter looks forward to. 



1 can drained and rinsed navy beans  (I have used everything from chickpeas, to black beans even canned lentils)
1 3/4 cups beef broth
1 small onion diced
1 minced clove of garlic
1/2 tsp. Italian seasoning
1 pkg of hot Italian sausages (4 or 5/pkg)  We like this soup with a spicy zip but if that is not for you, mild Italian sausage would be just fine. 
The recipe says to slice the sausage, so in the past i would partially freeze them to make slicing easier, but now I just purchase ground sausage meat or squeeze the meat out of the casing and just roll tiny meatballs,
1 small green zucchini
1 small yellow zucchini
1 can diced tomatoes with herbs
1/3 cup dry red wine (never have it so I just always add 1/3 C water)
4 cups water
baby spinach or chopped spinach
parmesan cheese
Fry sausage slices or balls until brown, then put all ingredients but spinach and cheese in pot.
Bring to boil and simmer until zucchini and onion are tender.
To serve, I put some baby spinach leaves and parmesan cheese in the bottom of the bowls, then ladle hot soup on top and this will be plenty of heat and time to cook the tender spinach leaves.

Please Excuse This Interruption...

We are not all fans of change.  It rattles our sense of security, and our comfortably formed habits.  However, change can be a good thing.  It allows us to move forward, and experience what newness and progression has to offer. 


On March 1, 2012 there will be a change in Blogland.  Google owns Blogger (our blog host) and they will be retiring Google Friends Connect for all non-blogger sites.  GFC is the button on the right side of our blog that allows you to click and follow our blog.   (The one that says "Join this Blog with Google Friends Connect".)  Since we are a Blogger site, it will not initially affect our blog.  But I truly believe that the writing is on the wall, and eventually Google will discontinue it completely. 


Having the ability to "follow" your favorite blogs is wonderful, and prevents you from missing any posts on that blog.  Currently at Take Six, we have 5 different "following options" for you.  Each of these allows you to follow our blog.  Our readers may choose whichever one works best for them personally.


Oh the right side of our blog you can follow us through:


Email - When you insert your email address in that spot, every time we publish a new post it will be emailed to you.


Facebook - by "Liking" our fan page.  We link every blog post to our FB page.

Take 5 with Kathy - "Strength lifted up..."


As I’ve been meditating on the story of Hannah in the Bible, her persistence, unselfish devotion, humility before God, and her resolve to keep her promise to God have inspired me. They have also made me ask a few questions, “Where did Hannah find the strength to follow through with her solemn vow to give her son back to the service of God? How could she possibly take her small son and leave him at the temple?”

When our son was three weeks old, we took him to our church on a Sunday morning to dedicate him to the Lord. As believers and followers of Jesus Christ, we desired to publicly seek God’s blessing on his life. When our pastor cradled our precious little boy in his arms and prayed for him to grow up to know and serve the Lord, he also prayed for us as parents that we would have the wisdom and strength to raise our son in the ways of the Lord. Our church family also stood with us and committed themselves to help us in this responsibility. We knew it was a solemn occasion and that we were placing our son’s future in God’s hands. It was also a joyful time which we celebrated afterward with many close family members. The most wonderful part was being able to take him home with us and begin the privilege and joy of raising him in our own home. Would I ever have found the strength in a couple of years to leave him at our church in the care of our minister knowing I would only see him once a year for the rest of my life?

That was the reality that faced Hannah as she cradled tiny Samuel in her arms and lovingly nursed him. When the time came for the annual sacrifices, she told her husband, “After the boy is weaned, I will take him and present him before the Lord, and he will live there always.”[i]

I pause to wonder how much input her husband, Elkanah, had in Hannah’s decision. Despite his feelings as Samuel’s father, he fully supported Hannah. “Whatever you think is best,” Elkanah agreed, “Stay here for now, and may the Lord help you keep your promise.”[ii]

When Samuel was weaned, likely between the ages of two and four, “she took the boy with her, young as he was…and brought him to the house of the Lord at Shiloh.”[iii] As she presented him to Eli, the priest, she said, “So now I give him to the Lord. For his whole life he will be given over to the Lord.”[iv]

I’m sure there were tears, hugs, and kisses as this loving mother said goodbye to her little one. Did Samuel cry and cling to his mother? Did Eli have to hold him tightly as Samuel peered through tearful eyes at his mommy disappearing from view? I wonder if he cried himself to sleep at night longing for the safety and security of his mother’s arms. Scripture doesn’t provide these details, but as a mother I can well imagine the scene and the aftermath. It surely wasn’t easy for Samuel and Eli.

And what about Hannah? It would seem from chapter 2 that before she left the temple to go home, she once again offered up a prayer to God. It is here we discover the secret of her strength.

“My heart rejoices in the Lord; in the Lord my horn is lifted high…”[v]This latter phrase is repeated several times in the Old Testament[vi] and in each passage “horn” is a metaphor for strength. Animal horns, particularly those of an ox or ram, had many purposes. One usage was to raise the horn high in triumph after a victory had been won. It was a display of strength and restored dignity. Hannah rejoiced that God had seen her state of dishonor, humiliation, and deep sorrow and had exalted her and lifted up her strength. What an encouragement to know that God will do the same for each of us, in our own place of challenge, as we faithfully trust in Him!

Hannah’s prayer continued to praise the Lord for coming to the aid and deliverance of those who are hungry, barren, poor, and needy. She recognized that her strength came from the One who had lifted her up.

“There is no one holy like the Lord; there is no one besides you; there is no rock like our God.”[vii]

I’ve learned so much from Hannah! I pray that as I continue to face the challenges of my life that I will rely on the strength of my Rock and the horn of my salvation, Jesus Christ[viii]

Soup's On...with Paula! #1

~Corn and Potato Chowder~


Here is our first delicious homemade soup recipe of the month.  Creamy yet chunky soup, rich with the sweet taste of corn.  It is excellent served with thick crusty bread or rolls and topped with some grated sharp cheddar.  A nice soup that does not take long to cook.  I made it this weekend for lunch after we got home from church.  It took 30 minutes start to finish.





INGREDIENTS:
1 onion, chopped
1 garlic clove, crushed
1 medium baking potato, peeled & chopped
1 celery stick, diced
1/4 C green pepper, diced
2 T veg oil
2 T butter
2 1/2 C stock or water
1 1/2 C milk
1/8 C light cream
1 can (11 oz.) corn kernels
pinch of dried sage
salt and pepper
Cheddar cheese, grated
Put onion, garlic, potato, celery and green pepper into a large heavy based pan with the oil and butter.  Heat the ingredients until sizzling then reduce the heat to low.  Cover and cook gently for about 10 minutes, stirring often to prevent sticking.  

Pour in the stock or water, season with salt and pepper to taste and bring to the boil.  Reduce the heat, cover again and simmer gently for about 15 minutes until the vegetables are tender.
Add the milk, cream, corn (including its liquid) and sage.  Simmer gently, uncovered, for 10 minutes or until all heated through.  Serve hot, sprinkled with cheese.
NOTE:  I added 1 Cup of diced baked ham to the chowder...my husband is a true carnivore and feels a meal is complete only if it includes meat.  :0)
Also, I have lots of fresh-frozen corn in the freezer from the garden last summer.  I added 2 bags of that instead of a can of corn kernels.  It probably totalled a good 2 Cups of corn.
