Soup's On...with Paula #4



Welcome to our last Soup's on!  In the spirit of "keeping it real" around here, we wanted to let you know that the soup we had planned for this week...well, um...flopped!!  I pretty certain there was an error in the recipe.  

Since there isn't always time in one's week to have a "redo", we are sharing a recipe that was just given to us by our cousin's fiance.  We were talking about homemade soups at a family get-together last week, and Anjelica shared this favorite of hers.  Having not had a chance to make it yet, there is no picture.  But we know you will love it!  Thanks Anjelica!


Spicy Chicken Soup


Ingredients


  • 2 quarts water
  • 8 skinless, boneless chicken breast halves
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons dried parsley
  • 1 tablespoon onion powder
  • 5 cubes chicken bouillon
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 (16 ounce) jar chunky salsa
  • 2 (14.5 ounce) cans peeled and diced tomatoes
  • 1 (14.5 ounce) can whole peeled tomatoes
  • 1 (10.75 ounce) can condensed tomato soup
  • 3 tablespoons chili powder
  • 1 (15 ounce) can whole kernel corn, drained
  • 2 (16 ounce) cans chili beans, undrained
  • 1 (8 ounce) container sour cream

Directions


1.                        In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder and bouillon cubes. Bring to a boil, then reduce heat and simmer 1 hour, or until chicken juices run clear. Remove chicken, reserve broth. Shred chicken.

2.                        In a large pot over medium heat, cook onion and garlic in olive oil until slightly browned. Stir in salsa, diced tomatoes, whole tomatoes, tomato soup, chili powder, corn, chili beans, sour cream, shredded chicken and 5 cups broth. Simmer 30 minutes.

  2. Oops, we all have disasters in the kitchen every once in a while. Love that you were honest about it - something you don't find in blogland very often. It's all about perfection. This soup sounds delicious however.

Sorry to hear about the kitchen mishap, I amde a beautiful casserole one time, as I took it from the oven it fell to the floor, oops.   6. Sorry to hear about your soup flop ! We all have flops now and then. I can remember when I was younger and newly married I did a roast and forgot it was in the oven well ya know burnt offerings are not apatizing to say in the least lol so we had grilled cheese for supper ! This soup sounds YUMMY ! thanks for sharing ! Have a good day !

  7. Gosh, this sounds good. I make a lot of soup, but have so few chicken recipes that I really like. The word "spicy" did it for me here, I'm going to try this.
